Evaluation of Modified and ‘Futy’ Kiln on Microbial Load of Five Commercially Important Fish Species in Hadejia Jigawa State, Nigeria

Abstract

This study examined the effect of two different Smoking Kilns on microbial load in Hadejia Jigawa state of Nigeria. Two smoking kilns tagged FUTY smoking kiln and Modified drum smoking kiln were used to smoke five different fish species. Each was smoked for 0-8hours smoking duration and the output was compared with the Market smoked fish species. The five species smoked were Heterotis niloticus, Oreochromis niloticus, Clarias gariepinus, Bagrus bayad, and Mormyrus rume.The nutrient compositions showed that fish smoked with Modified drum kiln gave the best performance in terms of dry matter and protein content of 96.67% and 61.72% for Heterotis niloticus while Futy kiln smoked fish dry matter and protein content of 94.02% and 58.80% were recorded for Bagrus bayad. Market smoked fish gave 89.87% dry matter for Clarias gariepinus, 61.18% crude protein.. Microbial load was highest in Market smoked Fish species with the value of 2.89 x 104 and the lowest microbial load of 1.11 x 104 for Modified drum smoking kiln. The results showed that Modified smoking kiln smoked fish are better compared to both FUTY and Market smoked fish.
